Shuetsu is a pickle shop in Ueno.
One of Tokyo’s oldest pickle shops, with roots stretching back to the early Edo period, Shuetsu was founded over 350 years ago. It is credited with creating fukujinzuke, the soy-simmered vegetable relish that generally comes with a portion of Japanese curry.
The shop specialises in traditional tsukemono (pickled vegetables) and tsukudani (preserved foods simmered in soy and mirin).
