Was science your favorite subject in school? At Science Bar INCUBATOR, you can sip on cocktails that double as science experiments. Watch the reactions happen right in your glass while learning about the chemical compounds.
What’s Science Bar INCUBATOR?
Run by Takashi Nomura, a specialist in developmental biology, this bar will take you back to school science lessons. With Bunsen burner sake and cocktail mixtures that cause color changes and reactions, Nomura aims to make science (and drinking) more fun.
To get into the spirit (no pun intended), you can first put on a lab coat and flick through the extensive menu. It’s available in English as well. The choice is quite overwhelming. There’s just about any type of alcohol you can think of, as well as original cocktails.
However, for the most fun, you’ll want to pick one of the special demonstration cocktails. These include a Pure Water Gyokuro Cocktail, a Self-Warming Sake Set, and Absinthe (Bohemian Style). Prices for these are between ¥1,100 to ¥1,500. After ordering one of these, Nomura (or one of the other staff members), will talk you through the experiment, explaining how the elements react to each other.
If you’d rather just have some wine, you can sample red or white test-tube wine. Or try the new AI cocktail — we’re intrigued.
The bar also offers a range of food that follows the science theme. These include Gouda cheese, which you grill over an alcohol lamp yourself, as well as potato chips seasoned with carbonyl compounds. For desserts, there’s vanilla ice cream smoked with carbonyl compounds too.

Do you need reservations for Science Bar INCUBATOR?
Although walk-ins are welcome, the bar area is quite small, so we recommend making a reservation on the official website to be safe. Please note that there is a table charge of ¥800 per person.
