    Amazake is actually partly fermented as in early sake fermentation. It is at the stage when much of the starch has been converted to sugar but the sugar has yet to be converted to alcohol.

    The fat buddha you refer to is probably Hotei a 10th century Chinese monk who was considered an incarnation of a buddha.
